What is Cinnamon?
Cinnamon is one of the world’s oldest and most widely used spices, valued for its distinctive aroma, warming flavour and long history across culinary and traditional botanical practices.
Cinnamon comes from the inner bark of trees belonging to the Cinnamomum genus. Several different species are sold commercially as cinnamon, which means products carrying the same familiar name can differ considerably in flavour, appearance and naturally occurring compounds.
Two broad types are commonly discussed: Ceylon cinnamon (Cinnamomum verum), often called “true cinnamon”, and the group of stronger-flavoured cinnamons generally known as cassia cinnamon.
Where Does Cinnamon Come From?
Different cinnamon species originate in tropical regions of South and Southeast Asia.
Ceylon cinnamon (Cinnamomum verum) is particularly associated with Sri Lanka, which remains famous for its production.
Several other Cinnamomum species are commonly grouped commercially under the name cassia, including Chinese cassia (Cinnamomum cassia), Indonesian cinnamon (Cinnamomum burmannii) and Vietnamese or Saigon cinnamon (Cinnamomum loureiroi).
Cinnamon is harvested from the bark of the tree. After the outer bark is removed, sections of the inner bark are peeled away and dried. As they dry, the pieces naturally curl into the familiar cinnamon quills or sticks.
These can then be used whole or ground into cinnamon powder.
What’s Naturally Found in Cinnamon?
Cinnamon contains a complex collection of naturally occurring aromatic and plant compounds.
The best known is cinnamaldehyde, one of the major contributors to the characteristic aroma and flavour of cinnamon bark.
Cinnamon also contains various:
- Polyphenols — a broad group of naturally occurring plant compounds
- Flavonoids — naturally occurring compounds found throughout many plants
- Volatile aromatic compounds — responsible for much of cinnamon’s characteristic fragrance
- Coumarin — naturally present in cinnamon, but at substantially different concentrations depending on the species
Eugenol is another compound associated with cinnamon, particularly the leaf essential oil of Ceylon cinnamon.
The precise chemical profile depends on the cinnamon species, which part of the plant is being examined, where it was grown and how it was processed.
Ceylon vs Cassia: What’s the Difference?
The distinction between Ceylon and cassia cinnamon is useful because “cinnamon” does not describe one chemically identical ingredient.
Ceylon cinnamon (Cinnamomum verum) is sometimes called “true cinnamon”. Its dried bark typically forms thin, delicate layers rolled together into relatively fragile quills. Its flavour is generally considered lighter and more delicate.
Cassia cinnamon refers commercially to several related Cinnamomum species. Cassia bark is generally thicker, harder and stronger in flavour than Ceylon cinnamon.
One of their most important compositional differences is coumarin.
Ceylon cinnamon generally contains relatively low concentrations of coumarin, whereas cassia varieties can contain substantially higher amounts. Concentrations can still vary according to species, origin, growing conditions and individual product.
This is one reason knowing the actual species can be useful when comparing cinnamon products rather than relying solely on the word “cinnamon”.
Cinnamon in Culinary and Traditional Use
Cinnamon has an exceptionally long history as both a culinary spice and traded commodity.
It became highly valued throughout ancient trade networks connecting Asia, the Middle East, North Africa and Europe. Over time it became incorporated into an enormous variety of food traditions.
Today cinnamon appears in sweet and savoury dishes, teas, spice mixtures, baked foods and traditional preparations throughout the world.
It also has longstanding roles in Ayurvedic and traditional Chinese practices and has frequently been paired with ingredients such as ginger, turmeric, cardamom and honey.
These traditions are an important part of cinnamon’s cultural history, but traditional use should be distinguished from evidence that a modern cinnamon supplement produces a particular therapeutic effect.
Cinnamon in Modern Research
Cinnamon and its naturally occurring compounds have attracted considerable modern research interest.
Areas investigated include interactions involving:
- Glucose metabolism
- Lipid metabolism
- Oxidative processes
- Inflammatory pathways
- Digestive physiology
- Microorganisms
However, cinnamon research uses many different preparations, including whole cinnamon powder, aqueous extracts, concentrated extracts and isolated compounds. Different species are also used across studies.
For this reason, findings from research involving a particular cinnamon species or standardised extract should not automatically be assumed to apply equally to every cinnamon product.
Whole Cinnamon Powder vs Cinnamon Extract
As with many botanical ingredients, whole cinnamon powder and cinnamon extracts are different products.
Whole cinnamon powder is produced by grinding dried cinnamon bark. It retains a broader representation of the compounds naturally present in the bark rather than deliberately concentrating one particular constituent.
A cinnamon extract undergoes additional processing to extract or concentrate selected compounds. Some extracts may also be standardised to particular constituents.
Neither format is automatically superior. They simply represent different ways of preparing the same botanical and shouldn’t be treated as directly equivalent.
