What Is Garlic?
Garlic (Allium sativum) is one of the world’s oldest cultivated food plants and one of the most widely used ingredients in global cuisine. A member of the Allium genus alongside onions, leeks, shallots and chives, garlic has been valued for thousands of years both as a food and within traditional botanical practices.
The familiar garlic bulb is made up of individual cloves and develops its characteristic pungent aroma when the cloves are cut, crushed or chewed. This process triggers chemical reactions that produce some of the sulphur-containing compounds for which garlic has become particularly well known.
Where Does Garlic Come From?
Garlic has an exceptionally long history of cultivation.
Its precise wild ancestry is complex, but garlic is generally associated with Central Asia and surrounding regions before spreading through ancient trade and migration into the Middle East, Mediterranean, Europe and Asia.
Historical records show garlic being consumed in ancient Egypt, Greece and Rome, while it also became deeply established in Indian, Chinese, Middle Eastern and Mediterranean food traditions.
Over centuries, garlic developed into an everyday culinary ingredient across an enormous geographic area — used fresh, dried, roasted, fermented, pickled and powdered.
What’s Naturally Found in Garlic?
Garlic contains a complex collection of naturally occurring sulphur compounds.
One of the best known is allicin, but fresh intact garlic does not actually contain significant amounts of allicin.
Instead, intact garlic contains compounds including alliin and the enzyme alliinase, which are normally separated within the plant’s cells.
When garlic is crushed, chopped or chewed, those cells are disrupted. Alliinase can then act on alliin, resulting in the rapid formation of allicin.
This reaction is responsible for much of the distinctive aroma associated with freshly crushed garlic.
Allicin itself is relatively unstable and can subsequently form other sulphur-containing compounds.
Garlic and different garlic preparations can therefore contain compounds including:
- Alliin — a naturally occurring sulphur-containing precursor
- Allicin — formed following disruption of fresh garlic tissue
- Diallyl sulfides — a family of sulphur compounds produced through subsequent reactions
- Ajoene — another sulphur-containing compound associated with processed garlic preparations
- S-allyl cysteine — particularly associated with aged garlic preparations
Garlic also contains smaller quantities of various flavonoids, saponins and other naturally occurring plant compounds.
Why Preparation Matters
Garlic is a good example of why different preparations of the same botanical should not automatically be treated as equivalent.
Fresh garlic undergoes the alliin–alliinase reaction when the cloves are crushed or chopped, producing allicin.
Garlic powder is produced by drying garlic and grinding it into a powder. Its composition depends considerably on drying temperature, processing and storage conditions.
Aged garlic undergoes prolonged processing that changes its sulphur-compound profile and is particularly associated with compounds such as S-allyl cysteine.
Garlic extracts can be manufactured to concentrate or standardise particular constituents.
Consequently, findings from research using one specific garlic preparation should not automatically be assumed to apply equally to fresh garlic, whole garlic powder, aged garlic extract and other concentrated preparations.
Garlic in Traditional Use
Garlic has one of the longest documented histories of any culinary botanical.
Ancient Egyptian sources record garlic as a food, while Greek and Roman writers also described its consumption. Garlic subsequently became firmly established throughout Mediterranean cuisine.
Garlic also has longstanding roles in Indian and East Asian food traditions, where it has been incorporated into countless preparations alongside spices and other botanicals.
Its historical reputation extended beyond cooking, and garlic appears in numerous traditional herbal systems.
These traditions are an important part of garlic’s cultural history, but traditional use should be distinguished from evidence that a modern garlic supplement produces a particular therapeutic effect.
Garlic in Modern Research
Garlic has been extensively investigated in modern nutritional and botanical research.
Areas of investigation include garlic’s sulphur compounds and their interactions with:
- Cardiovascular physiology
- Oxidative processes
- Lipid metabolism
- Platelet function
- Inflammatory pathways
- Microorganisms
Research results vary according to the garlic preparation, concentration, quantity consumed and population studied.
This distinction is particularly important with garlic because fresh garlic, garlic powder, aged preparations and standardised extracts can have substantially different chemical profiles.

Whole Garlic Powder vs Garlic Extract
For supplements, one of the most useful distinctions is between whole garlic powder and concentrated extracts.
Whole garlic powder retains a broader representation of the dried garlic material rather than deliberately concentrating one selected compound.
An extract has undergone additional processing to concentrate particular constituents or produce a standardised preparation.
Neither description automatically makes a product better or worse. They represent different ingredient formats and shouldn’t be considered directly equivalent simply because both originate from garlic.
