What Is Pumpkin Seed?

Pumpkin seeds — the edible seeds of Cucurbita species, particularly Cucurbita pepo — are among the most nutritionally dense whole foods in common use. Flat, oval, and green when hulled, they have been cultivated and eaten across the Americas for thousands of years and are now a familiar ingredient in cuisines and food traditions worldwide.

Unlike many ingredients that require processing or extraction to concentrate their nutritional value, pumpkin seeds are a whole food: the seed itself, dried and consumed as it is. That simplicity is part of what makes them nutritionally interesting.

What Are Pumpkin Seeds?

Pumpkin seeds are the seeds of plants in the Cucurbita genus — the same genus that includes pumpkins, squash, and gourds. The species most commonly associated with culinary pumpkin seed use is Cucurbita pepo, though seeds from other Cucurbita species are also eaten.

The seeds have two layers: an outer white hull and an inner green kernel, sometimes called a pepita (from the Spanish pepita de calabaza, meaning “little seed of squash”). In culinary contexts, “pumpkin seed” can refer to either the whole seed with hull or the hulled green kernel; in supplement and food manufacturing contexts, the hulled kernel is most commonly used.

Pumpkin seeds are grown across a wide range of climates wherever Cucurbita species are cultivated — which is to say, across most of the world's temperate and tropical agricultural regions.

Origin & History

Cucurbita pepo is native to the Americas, with archaeological evidence placing its cultivation in Mexico and Central America at least 7,500 years ago — making it one of the oldest cultivated plants in the Western Hemisphere. Pumpkin seeds have been found in archaeological deposits in Mexico dating back several thousand years, confirming their use as a food source long before European contact.

Cucurbita species were among the most important cultivated plants in pre-Columbian Mesoamerican agriculture, forming part of the “Three Sisters” — the traditional companion planting of maize, beans, and squash that was central to agricultural systems across much of North and Central America. The seeds were a significant food source alongside the flesh of the fruit.

Following European contact, Cucurbita species spread rapidly through global trade networks, and pumpkin seeds became part of food traditions across Europe, Asia, and Africa. In Central Europe — particularly Austria and the Styrian region — a distinct tradition of cold-pressed pumpkin seed oil developed, using a specific Cucurbita pepo variety bred for its hull-less seeds. Styrian pumpkin seed oil has Protected Designation of Origin (PDO) status in the European Union, reflecting the depth of this regional tradition.

Nutritional Profile

Pumpkin seeds are nutritionally dense across several dimensions:

Protein — pumpkin seeds contain plant protein, including all essential amino acids. As a whole food protein source, they are among the more complete plant-based options available.

Fats — pumpkin seeds contain a significant proportion of unsaturated fats, primarily oleic acid (monounsaturated) and linoleic acid (polyunsaturated omega-6). The fat profile is similar in character to other seed oils.

Minerals — pumpkin seeds naturally contain magnesium, zinc, iron and phosphorus. The amounts vary according to variety, growing conditions and processing.

Phytosterols — pumpkin seeds contain plant sterols, including beta-sitosterol, which are naturally occurring compounds found in many plant foods.

As with all whole foods, the nutritional composition of pumpkin seeds varies according to variety, growing conditions, processing, and storage.

Zinc & Magnesium in Pumpkin Seeds

Among the naturally occurring minerals in pumpkin seeds are zinc and magnesium, two essential nutrients with established roles in normal human nutrition.

Zinc is an essential mineral involved in a wide range of physiological processes. Plant-based sources of zinc are generally less bioavailable than animal sources due to the presence of phytates, which can bind to zinc and reduce absorption. Pumpkin seeds contain phytates, so their zinc is not as readily absorbed as zinc from meat or shellfish — but they remain one of the more zinc-containing plant foods available.

Magnesium is another essential mineral. Pumpkin seeds naturally contain magnesium, and as a whole food they contribute this mineral alongside protein, fats, and other components of the seed.

Traditional Use

Pumpkin seeds have documented culinary use across Mesoamerican traditions stretching back thousands of years. In Mexican cuisine, ground pumpkin seeds are a key ingredient in pepián — a traditional seed-based sauce with pre-Columbian origins documented in colonial-period sources. Pepián represents one of the more specific and well-documented traditional culinary uses of pumpkin seeds, distinct from their general use as a snack or food ingredient.

In Ayurvedic tradition, pumpkin seeds (kaddu ke beej) appear in traditional texts, though their use in South Asian traditions developed after Cucurbita species were introduced to the region following European contact — a reminder that even “traditional” uses of American plants in Asian systems are post-contact developments.

In Central European folk medicine, pumpkin seeds have a documented history of traditional use, particularly in the Styrian and Balkan regions. This tradition is well-attested in ethnobotanical records from the 19th and early 20th centuries.

Whole Seed vs Oil vs Extract

Pumpkin seeds are available in several forms, each with different characteristics:

Whole seeds / ground powder — retains the full seed material including protein, fats, fibre, and minerals. This is the whole-food form and the basis of our pumpkin seed capsules.

Cold-pressed oil — extracts the fat-soluble components of the seed, concentrating the fatty acid profile and fat-soluble compounds. Does not retain the protein, fibre, or water-soluble minerals of the whole seed.

Extracts — concentrated preparations targeting specific compounds, typically phytosterols or other constituents. These are more processed than whole seed or oil.

Ground whole-seed powder retains protein, fats, fibre, minerals and other components of the original seed, whereas oils and extracts concentrate particular fractions.
