What Is Cardamom?

Cardamom is a spice produced from the seed pods of several plants in the ginger family (Zingiberaceae). The best-known culinary variety is green cardamom (Elettaria cardamomum), sometimes called true cardamom. Black cardamom (Amomum subulatum) is a related but distinctly different spice, with a larger pod and a stronger, smokier character.

When people refer simply to "cardamom" in many culinary contexts, they are usually referring to green cardamom — the variety discussed primarily in this article.

Where Does Green Cardamom Come From?

Green cardamom (Elettaria cardamomum) is native to the moist forests of southern India, particularly the Western Ghats, and has a long history of cultivation and trade across South Asia.

Cardamom travelled through ancient and medieval trade networks into the Middle East and Mediterranean, eventually becoming embedded in culinary traditions far beyond its original growing region. References to cardamom appear in ancient Ayurvedic texts and Sanskrit literature, and the spice reached the Mediterranean world through Arab traders, where it became valued in Greek and Roman culinary contexts — though ancient references translated as "cardamom" are not always botanically straightforward.

Today, Guatemala is the world's largest producer of green cardamom, while India remains an important producer and has a particularly strong historical association with the spice.

Naturally Occurring Compounds

Green cardamom's characteristic aroma and flavour come primarily from its volatile oil content. The main constituents of cardamom essential oil include 1,8-cineole (also found in eucalyptus) and α-terpinyl acetate, which together account for much of the spice's distinctive fragrance.

Cardamom also contains smaller amounts of other terpenes and aromatic compounds, as well as dietary fibre, minerals and polyphenols. As with most spices, the concentrations of these compounds vary depending on variety, growing conditions and processing.

Why Preparation Matters

Because its aromatic compounds gradually diminish after grinding, whole pods and freshly ground seeds generally retain their aroma longer than pre-ground cardamom. Different culinary traditions use cardamom at different stages of preparation — whole, crushed or ground — depending on the flavour being sought.

When used as a whole-food powder in capsule form, the full seed material is retained rather than an isolated extract or essential oil fraction.

Traditional Use

Cardamom has a long history of use across many culinary and traditional systems. In Ayurvedic tradition, it has been used as a digestive spice and flavouring agent for centuries. In the Middle East, cardamom is a defining ingredient in qahwa (Arabic coffee) and is used extensively in both savoury and sweet dishes. In Scandinavia, cardamom is a characteristic spice in traditional baking, introduced through medieval trade routes. In South Asia, it is a foundational ingredient in chai, biryanis and sweets.

This breadth of use across distinct culinary traditions reflects cardamom's long history as a traded spice rather than a single unified cultural tradition.

Modern Research

Cardamom has been the subject of research interest, with studies examining its volatile oil constituents and polyphenol content. As with many traditional spices, the research base is still developing, and most studies have been conducted in laboratory or small clinical settings. We present this context without drawing conclusions about specific effects.
