What Is Sweet Paprika?
Sweet paprika is a spice produced from dried and ground fruits of Capsicum annuum, a species of pepper in the nightshade family (Solanaceae). It is made from mild, sweet-fleshed pepper varieties rather than hot ones, giving it a rich colour and gentle flavour without significant heat. Sweet paprika is one of several paprika types — ranging from sweet through to hot and smoked — and should not be confused with cayenne pepper, which is produced from hot cayenne-type peppers and contains substantially more capsaicin.

Origin and History
All Capsicum species are native to the Americas, where they were cultivated for thousands of years before European contact. Sweet and mild pepper varieties were among the plants brought to Europe following the voyages of the late 15th and early 16th centuries, where they were gradually adopted into local cuisines.
Paprika as a distinct spice category became particularly associated with Central and Eastern European culinary traditions — most notably Hungarian and Spanish — where specific mild pepper varieties were selected and cultivated over generations for their colour, flavour and low heat. Hungary and Spain remain the most historically significant producers of paprika, each with distinct regional varieties and processing traditions.
Today, sweet paprika is produced in many countries and is used across a wide range of culinary traditions globally.
Naturally Occurring Compounds
Sweet paprika's characteristic deep red colour comes primarily from carotenoid pigments, particularly capsanthin and capsorubin, which are found in significant concentrations in ripe red Capsicum annuum fruits. These carotenoids are responsible for paprika's use as a natural colouring agent as well as its nutritional profile.
Sweet paprika also contains other carotenoids including beta-carotene and zeaxanthin, as well as vitamin C and polyphenolic compounds. As with most spices, the concentrations of these compounds vary depending on variety, growing conditions, ripeness at harvest and processing method.
Unlike cayenne and hot paprika varieties, sweet paprika contains very low levels of capsaicin — the compound responsible for the heat sensation in chilli peppers.
Why Preparation Matters
Paprika is also commonly combined with oils and fats in traditional cooking. Because carotenoids are fat-soluble, consuming carotenoid-rich foods alongside dietary fat can influence their absorption.
Heat and light can degrade carotenoids over time, which is why paprika is typically stored away from direct light and used within a reasonable period after opening. When used as a whole-food powder in capsule form, the full dried pepper material is retained rather than an isolated extract or individual pigment fraction.
Traditional Use
Sweet paprika has been a defining ingredient in Hungarian cuisine for several centuries, appearing in dishes such as goulash (gulyás), chicken paprikash (paprikás csirke) and various stews. In Spain, pimentón is an important spice with sweet, bittersweet and hot varieties, and some regional styles are traditionally smoke-dried. It features prominently in foods including chorizo and numerous regional dishes. Across the Mediterranean and Middle East, mild paprika is used extensively as both a flavouring and a garnish.
These culinary traditions reflect paprika's role as a spice valued primarily for its colour, mild warmth and flavour rather than its heat — a distinct culinary identity from the hot pepper traditions of other regions.
Sweet Paprika vs Cayenne
Both sweet paprika and cayenne are produced from Capsicum annuum, but from very different varieties selected for different characteristics. Sweet paprika is made from mild, fleshy pepper varieties bred for colour and flavour; cayenne is made from hot cayenne-type peppers with a high capsaicin content. The two spices have distinct flavour profiles, heat levels and traditional uses, and are not interchangeable in most culinary or supplement contexts.
