What Is Cacao?

Cacao (Theobroma cacao) is the tropical tree whose seeds — commonly known as cacao beans — are used to produce cacao products, cocoa and chocolate. With a history of cultivation and cultural significance spanning thousands of years in Mesoamerica, cacao has been valued as a food, ceremonial beverage and trade good across many cultures. The beans contain a diverse range of naturally occurring plant compounds and nutrients.

Naturally Occurring Compounds

Cacao contains a complex mixture of naturally occurring plant compounds. Among the best studied are flavanols, a group of polyphenolic compounds naturally present in cacao beans.

Cacao also contains theobromine, a naturally occurring methylxanthine related to caffeine, together with smaller amounts of caffeine. The relative concentrations of these compounds vary according to cacao variety, growing conditions, fermentation, roasting and other processing methods.

As a whole food, cacao also provides nutrients including magnesium, iron, copper and manganese. Its composition therefore extends well beyond the compounds most commonly associated with chocolate.

Origin and History

Cacao has been cultivated for thousands of years, with deep cultural significance in Mesoamerican civilisations including the Olmec, Maya and Aztec. It was consumed as a ceremonial beverage, used in religious rituals and valued as a trade good. The terminology surrounding cacao has deep roots in the languages and cultures of Mesoamerica, reflecting its importance long before the development of modern chocolate.

In these traditions, cacao was consumed as a drink rather than eaten as solid chocolate, often ground into a paste and mixed with water, spices and other botanicals. This is a very different preparation from modern chocolate, which typically contains added sugar, milk fats and other ingredients.

Cacao vs Cocoa vs Chocolate

The terms cacao and cocoa don't have universally consistent definitions, and manufacturers sometimes use them differently. As a general guide:

  • Cacao — the plant (Theobroma cacao) and its beans/seeds; the term is also commonly used commercially for products such as cacao nibs and cacao powder.
  • Cocoa — commonly used for cacao ingredients after further processing, including cocoa powder, although the distinction from "cacao" is not standardised.
  • Chocolate — a finished food produced from cacao-derived ingredients and usually combined with additional ingredients such as sugar and, depending on the product, milk.

Processing — particularly fermentation, roasting and alkalisation — can alter the composition of cacao products, including their flavanol content. For this reason, cacao powder, cocoa powder and finished chocolate should not automatically be considered nutritionally equivalent.

Cacao and Caffeine

Cacao naturally contains caffeine and theobromine. The amounts vary depending on the variety, processing and serving size, but cacao products generally contain less caffeine than coffee or matcha. People who are sensitive to caffeine or who are limiting their caffeine intake should take this into account.

Whole Cacao Powder

Our cacao-containing blends use certified organic whole cacao powder rather than an isolated cacao compound. Whole cacao powder retains the naturally occurring mixture of plant compounds and nutrients present in the cacao ingredient, rather than being formulated around a single isolated constituent such as theobromine or a particular flavanol.
